a really simple hotpot
its so simple! you can cook it for as long or as quickly (obviously as long as the the meat is cooked!) as you like! normally i use sausages (cumberland) but you can use any meat you like, my dad likes to use stweing steak and my sister likes lamb chunks. anyway. preheat oven or turn on slow cooker! big oven proof dish or slow cooker- put in one tine of baked beans, i cup of boiling water and a stock cube and mix. add meat, in my case cumberland sausages. add in a selection of veg ( i use broccoli, carrot and cauliflower as these are the only one OH will eat !lol!) top all of this with sliced potatoes and drizzle with a little oil so the crisp a little. at about 150 degrees C it takes about two hours for the sausages to be cooked through and the spud top to be soft and crispy at the edges. once it is done, tip with cheese and grill for a few minutes so it gets nice and crispy! see really simple and really yummy! thats my dear mums recipe made up to feed 5 hungry kids on a budget! and we've all adapted it! occassionally if theres room in the bowl i do dumplings from a ready made dumpling mix packet. enjoy!
