carrot and swede soup
i already had some carrot and swede mash left over from the other night, so if you dont (hehe!) you can have it made to mash before hand or soften it all in with the stock, which is probably what i'd do. two servings 2 medium carrots, 1/2 swede 1/4 onion 1 pint stock knob (hehe!) of buttermelt butter in a pan, add onion and sizzle till its soft and transparent. add chopped carrot and swede (or mash, in my case!) and pour in hot stock. when C&S's are soft, zap with a hand blender or a masher (as my hand blender broke!) of course depending on how lumpy you want it! add a pinch of pepper. let simmer for 5-10 mins and serve with chunky crusty bread! but not too chunky, that would defy the point of this being good for you!lol! i have to say it was very yummy! im hoping abigail will like it too!
