chicken & veg pie
bare with me, its just off the top of my head, havent tried it yet as i've a million left overs to use before i get to this one! just had to write it down before i forgot!
sauce:
mushrooms
butter
whole milk/cream
white wine
pepper
stock
--- o ---
chicken
onions
sweet potato
carrot
puff pastry
sauce: melt butter in pan, add chopped mushrooms, sautee for a couple of mins. add enough flour to make a paste. heat through for a minute. add slosh of white wine, shake pepper, half pint hot stock and 4oz of whole milk/cream. simmer for 5-10 mins, blend until smooth or just slightly lumpy.
now add cooked chicken cubes, choped onion, (small) sweet potato chunks, chopped carrot. simmer for a 10-15 mins
put whole mixture into pie dish, cover with puff pastry, put in oven till pastry is golden brown.
do you think that will work?
mmm...serve with cabbage and green beans :)
Sounds lush Tilly and not a lot different to a recipe I use which I think I got off the BBC Food website. I normally add a little cooked smoked bacon or any little bits off a cooked gammon as well.
