Courgette & Tomato Lasagne
175g/60z no pre-cook lasagne
VEG SAUCE
1 Onion, sliced
1 Green Pepper
1-2 Cloves crushed Garlic
1lb Courgettes
2Tbsp Tomato Puree
Can Tomatoes
1/2 tsp dried Basil
1/2 tsp dried Oregano
1/4 tsp sugar
CHEESE SAUCE
1 oz Margarine
1 oz Flour
1/2 pt Milk
2 oz Grated Cheddar Cheese + Grated Cheese for Topping
1. Make Vegetable Sauce. Heat oil and Saute Onion and Pepper for 5 mins. Add garlic and courgettes and cook for a further 5 min. Stir in the Tomatoe puree and Canned Tomatoes. Add the herbs, sugar and seasoning. Simmer for 20 mins.
2. Make the Cheese Sauce. Melt margarine in saucepan. Remove from heat and stir in the flour, gradually add the milk, stir well between each addition. Return to heat to thicken sauce, stirring continuously. When thickened, stir in 2oz grated cheese. (I usually add a bit more than this for flavour).
3. Layer the veg sauce, cheese sauce and lasagne in an ovenproof dish. Finish with a layer of cheese sauce. Sprinkle over grated cheese. Cook until golden. 180C 40-45 mins
