creamy mushroom rissoto...yummy doesnt quite cover it!
as you might have guessed, i like mushrooms! lol! so does abi so i'm continuing my investigations into mushroom based recipes!
mushrooms (i used a whole medium tub of closed)
rice ( 2handfuls for every person, i put in 1 for abigail though and it was plenty)
1 lemon
1 pint of stock
butter * & some oil
half onion & 1 clove garlic
parmesan
4 oz cream (i used whole milk)
* in a pan soften chopped onion and garlic in the butter and dash of oil
* put in rice and allow to soak for 10 (ish) mins
* add juice of lemon and a ladle of stock
* add the mushrooms and stir well for 10 mins
* add the rest of the stock a little at a time, stirring constantly until rice is soft.
* once rice is soft, stir in a sprinkle of parmesan and cream
we just had this for lunch and it was divine! so creamy i could have dipped my strawberries in it! will definetly be making this again soon!
*i'm not sure how much butter i put in. at first a couple of big spoonfuls (!) and then once i'd added the rice i put in a bit more so when it melted all the rice was coated. sorry!
